Abstract

Objective: To assess the functionality of the slaughterhouse in the municipality of Tenancingo, Mexico, evaluating the elements of institutional capacity.


Design / methodology / approach: A search was done through scientific publications in different scientific and academic databases such as Scielo, Scopus, Latindex, Redalyc, Google Scholar, among others.


Results: The factors that act to the detriment of the slaughterhouse operation are economic, labor, health and political elements. There are groups that act on their own economic and political interests. Within labor aspects, there is a lack of formality from slaughterhouse operators.


Study limitations / implications: The laws exist to not feed the animals with Clenbuterol, but the reality is that they are not implemented.


Findings / Conclusions: In the administrative elements, a mapping of the actors who can improve the operational efficiency of the slaughterhouse is proposed.
