Abstract

The faba bean (Vicia faba L.) stands out for its content and characteristics of starch which has advantages comparedto commercial starches. The study aimed to analyze the characteristics of grain yield starch and total starch content of different cultivars of broad bean in the region of the Llanos de Serdán, Puebla, Mexico. The analysis was carried out in 14 accessions of five cultivars harvested in two localities, according to the collection number, and the locality. Grain thickness showed highly significant differences between Tlachichuca 2007 (7.5 mm) and San Cayetano 2011 (7.1 mm) locations. Total starch in flour had a dry weight (dw) percentage range of 50% to 60%, where highlighted most of the broad bean accessions planted in San Cayetano 2011, whose average (55.8% dw) was significantly higher than that of Tlachichuca 2007 (52% dw). In the extraction of pure starch an average yield of 36% was obtained where the cultivar Tarragona amarilla (Ta), collection 281 of San Cayetano 2011 had the highest percentage (43.7% dw). The yield of the
starch did not have a significant correlation with the grain dimensions of the analyzed cultivars. These results provide knowledge about characteristics of broad bean cultivar selection to obtain the best yields of starch.
